Tomato-Crowned Cod
Ingredients
- 1 1/2 lbs cod fish fillets ⓘ
- 2 tablespoons lemon juice ⓘ
- 1/8 teaspoon pepper ⓘ
- 2 large tomatoes, sliced 1/4 inch thick ⓘ
- 1/2 medium sweet green pepper, finely chopped ⓘ
- 2 tablespoons finely chopped onions ⓘ
- 1/4 cup dry breadcrumbs ⓘ
- 1 tablespoon chopped fresh basil or 1/2 teaspoon dry basil, crumbled ⓘ
- 1 tablespoon oil ⓘ
Instructions
- Arrange fillets in single layer in lightly oiled baking dish.
- Sprinkle with lemon juice and pepper.
- Place tomato slices on fish.
- Sprinkle with green pepper and onion.
- Combine bread crumbs, basil and oil in bowl; spread bread crumb mixture evenly over tomatoes.
- Bake in preheated 350 degree oven for 18 to 20 minutes or until fish flakes when pierced with fork.
