Tomato Herb Soup

Ingredients

  • 3 medium onions, chopped
  • 4 medium tomatoes, chopped
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme leaves
  • 3/4 teaspoon dried marjoram leaves
  • 1/4 teaspoon black pepper
  • 8 cups water
  • 8 slices French bread, toasted
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large, heavy soup pot over medium heat and sauté onions until lightly browned.
  2. Add chopped tomatoes and cook for 5 minutes more.
  3. Raise heat to high and add minced garlic, bay leaf, dried thyme, dried marjoram, black pepper, and water.
  4. Bring to a boil; reduce heat to medium and cook for 15 minutes.
  5. Puree soup, 2 cups at a time, in a blender.
  6. Return soup to the pot and reheat to a boil over high heat.
  7. Place two slices of toasted French bread in each serving bowl.
  8. Ladle soup over bread and top with grated Parmesan cheese.
