Tomato Herb Soup

Ingredients
- 3 medium onions, chopped ⓘ
- 4 medium tomatoes, chopped
- 1/4 cup extra virgin olive oil ⓘ
- 3 cloves garlic, minced ⓘ
- 1 bay leaf ⓘ
- 1 teaspoon dried thyme leaves ⓘ
- 3/4 teaspoon dried marjoram leaves ⓘ
- 1/4 teaspoon black pepper
- 8 cups water ⓘ
- 8 slices French bread, toasted ⓘ
- 1/2 cup grated Parmesan cheese ⓘ
Instructions
- Heat olive oil in a large, heavy soup pot over medium heat and sauté onions until lightly browned.
- Add chopped tomatoes and cook for 5 minutes more.
- Raise heat to high and add minced garlic, bay leaf, dried thyme, dried marjoram, black pepper, and water.
- Bring to a boil; reduce heat to medium and cook for 15 minutes.
- Puree soup, 2 cups at a time, in a blender.
- Return soup to the pot and reheat to a boil over high heat.
- Place two slices of toasted French bread in each serving bowl.
- Ladle soup over bread and top with grated Parmesan cheese.
