Ingredients

  • 1 unbaked 10-inch pastry shell
  • 2 large ripe tomatoes
  • salt and pepper
  • all-purpose flour
  • 2 Tbsp. vegetable oil
  • 1 c. sliced green onion
  • 1/2 c. sliced ripe olives
  • 3 slices Provolone cheese
  • 2 eggs
  • 1 c. shredded Cheddar cheese
  • 1 c. evaporated milk

Instructions

  1. Prick the bottom and sides of the pastry shell.
  2. Bake at 350°F for 8 minutes or until lightly browned.
  3. Set aside to cool.
  4. Layer the tomato slices in the baked pastry shell.
  5. Season with salt and pepper.
  6. In a skillet, heat 2 tablespoons of vegetable oil and sauté sliced green onions until tender.
  7. Spread the sautéed green onions over the tomatoes.
  8. Add sliced ripe olives and slices of Provolone cheese.
  9. In a bowl, beat the eggs slightly and mix with shredded Cheddar cheese and evaporated milk.
  10. Pour the egg mixture over the layered ingredients in the pastry shell.
  11. Bake at 350°F until the filling is set and golden, approximately 30-35 minutes.
