Ingredients

  • 4 large tomatoes
  • 6 Tbsp. chopped parsley
  • 1 clove crushed garlic
  • 6 Tbsp. oil
  • 2 Tbsp. cider vinegar
  • 1 tsp. salt
  • 1/2 tsp. dried basil
  • 4 leaves fresh basil (optional)

Instructions

  1. Dice the tomatoes.
  2. Add chopped parsley, crushed garlic, oil, cider vinegar, salt, dried basil (or fresh leaves), and pepper to the diced tomatoes.
  3. Toss the ingredients together.
  4. Cover and let sit for 3 hours to allow flavors to meld.
