Tomato-Zucchini Rice

Ingredients

  • walla walla sweet onion
  • tomato
  • mushroom
  • margarine
  • hot rice
  • zucchini

Instructions

  1. Put the onion and margarine in a microwavable bowl, cover and cook until almost soft.
  2. Add zucchini and mushrooms and continue cooking to the stage you prefer.
  3. Sprinkle with McKay's to taste.
  4. Stir in the tomatoes and heat through.
  5. Serve over hot rice.
