  • 1 qt. chopped onions
  • 3/4 c. salt
  • 6 sweet peppers
  • 1 stalk celery
  • 1 large cabbage
  • 1 qt. vinegar
  • 3 tsp. dry mustard
  • 1 tsp. cinnamon
  • 1 tsp. mustard seed
  • 3 lb. sugar

Instructions

  1. Prepare tomatoes, onions, peppers, celery, and cabbage by chopping them.
  2. Mix the chopped vegetables with salt and let stand for 2 hours.
  3. Drain the vegetable mixture after standing.
  4. Combine the drained vegetables with vinegar, dry mustard, cinnamon, mustard seed, and sugar.
  5. Cook the mixture for 30 minutes.
  6. Pour the hot relish into jars and seal.
