Ingredients

  • 1 can sweet corn
  • 1 pint canned tomatoes
  • 1/2 pound cottage cheese
  • 1 tablespoon cracker crumbs
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Spread a layer of canned or fresh sweet corn in a buttered baking dish.
  3. Add a layer of canned or fresh tomatoes over the corn.
  4. Spread a layer of cottage cheese on top.
  5. Repeat the layering of corn, tomatoes, and cheese as desired.
  6. Sprinkle cracker crumbs over the top and dot with butter.
  7. Bake for 30 minutes until golden and bubbly.
