Ingredients

  • 18 oz. refrigerated sugar cookie dough
  • 8 oz. cream cheese, softened
  • 1/3 cup sugar
  • assorted fruits (strawberries, blueberries, kiwi slices, seedless grapes, mandarin oranges, banana slices, etc.)
  • 1/2 cup apricot or peach preserves or orange marmalade
  • 2 tablespoons water

Instructions

  1. Preheat oven to 375°F.
  2. Cut cookie dough into 1/8-inch thick slices.
  3. Arrange cookie slices, slightly overlapping, into a 14 x 10-inch rectangle on a lightly greased foil-lined baking sheet.
  4. Press slices together lightly with fingers to form a crust.
  5. Bake for 10 to 12 minutes or until golden brown.
  6. Cool completely and carefully remove foil.
  7. In a bowl, beat softened cream cheese and sugar until smooth.
  8. Spread the cream cheese mixture over the cooled cookie crust.
  9. Arrange assorted fruits on top of the cream cheese layer.
  10. Heat apricot or peach preserves with water until liquid, then gently brush over the fruits.
