Ingredients

  • 1 pkg. frozen chopped broccoli
  • 6 small tomatoes
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 cup milk
  • salt
  • pepper

Instructions

  1. Cook frozen chopped broccoli until barely tender; drain well.
  2. Completely hollow out and drain the tomatoes.
  3. Make a cream sauce by melting butter, then stirring in flour, milk, salt, and pepper until smooth and thickened.
  4. Combine the cream sauce with the cooked broccoli.
  5. Stuff the hollowed tomatoes with the broccoli cream mixture.
  6. Sprinkle the stuffed tomatoes with buttered bread crumbs.
  7. Bake at 350°F for approximately 15 minutes for fresh or 30 minutes if made ahead and refrigerated.
