  • 1/2 cup diced celery with leaves
  • 1 cup mayonnaise
  • 3 pimiento drained and diced
  • 2 scallions minced or 1 teaspoon grated onion
  • 8 parsley sprigs leaves only chopped
  • salt and pepper to taste

Instructions

  1. Cut off the caps of the tomatoes and reserve them.
  2. Scoop out the insides to create a hollow and turn the tomatoes upside down to drain for 15 minutes.
  3. Combine the diced boiled chicken, diced celery with leaves, mayonnaise, diced pimiento, minced scallions or grated onion, chopped parsley, salt, and pepper in a bowl and mix well.
  4. Stuff the hollowed tomatoes with the chicken salad mixture and press the caps back on top.

Tips & Substitutions

For a lighter version, substitute Greek yogurt for half of the mayonnaise. You can also use leftover 'Best' Chicken to save time. If you prefer a bit more crunch, consider adding chopped bell peppers or radishes to the chicken salad mixture for added texture. Ensure the tomatoes are firm to hold the filling without breaking.

Serving Suggestions

These stuffed tomatoes make a delightful appetizer or light lunch. Serve them alongside a simple green salad or pair with crusty bread to soak up the flavors. They also complement well with a chilled glass of white wine for a refreshing summer meal.

Storage & Reheating

Store any leftover stuffed tomatoes in an airtight container in the refrigerator for up to 2 days. To maintain their texture, avoid freezing them. When ready to enjoy leftovers, serve them cold straight from the fridge for a refreshing dish.

Frequently Asked Questions

Can I use canned chicken for this recipe?

Yes, canned chicken can be used in place of boiled chicken for convenience. Just ensure you drain it well and break it into smaller pieces to mix evenly with the other ingredients.

What can I substitute for scallions?

If you don't have scallions, you can use finely chopped red or yellow onions as a substitute. Alternatively, shallots can provide a milder onion flavor that works well in this dish.

Can I make this recipe ahead of time?

Absolutely! You can prepare the chicken salad mixture a day in advance and stuff the tomatoes just before serving. This allows the flavors to meld together while keeping the tomatoes fresh and firm.
