  • 2 (4 oz.) jars Pimentos (drained, sliced)
  • 1 Egg
  • 8 oz. Ricotta Cheese
  • 2 ready-made 9-inch Pie Crusts
  • 8 oz. Mozzarella Cheese (shredded)
  • 1 tsp. Basil or Oregano

Instructions

  1. Remove casing from sausage, brown (crumble), and drain on paper towels.
  2. Separate the egg, mix the yolk with ricotta cheese and basil or oregano.
  3. Roll the first pie crust to fit a 9-inch pie plate.
  4. Sprinkle half of the mozzarella, half of the sausage, all pimentos, and all ricotta mixture in the crust.
  5. Add the remaining sausage and mozzarella on top.
  6. Roll out the second pie crust to fit as the top layer.
  7. Use a pastry brush to brush the top of the pie crust with egg whites.
  8. Bake at 375°F for 25 minutes.
  9. Cover with foil after 15 minutes if crust is getting too brown.
