Ingredients

  • 1 c. sugar
  • 1 c. chopped pecans
  • 1 c. graham cracker crumbs
  • 1 c. coconut
  • 4 egg whites
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1/2 pt. whipping cream

Instructions

  1. Beat egg whites with vanilla and salt until very stiff. Gradually add sugar while continuing to beat.
  2. Fold in chopped pecans, graham cracker crumbs, and coconut.
  3. Pour the mixture into a 9-inch buttered glass pie pan.
  4. Bake at 325°F (160°C) for 30 minutes. Remove and cool.
  5. Top with unsweetened whipped cream before serving.
  6. Make the day before serving to allow flavors to meld.
