Ingredients

  • 1 c. broccoli flowerets
  • 1 c. mushrooms, sliced
  • 1 c. cherry tomatoes, halved
  • 1 c. zucchini chunks
  • 7 oz. meat or cheese filled tortellini, cooked and drained
  • 1/2 c. pitted ripe olives, sliced
  • 1 (8 oz.) bottle Italian dressing
  • 2 Tbsp. Dijon-style mustard

Instructions

  1. Combine broccoli, mushrooms, cherry tomatoes, zucchini, cooked and drained tortellini, and sliced olives in a large bowl.
  2. Add the Italian dressing and Dijon mustard to the mixture.
  3. Gently toss to coat all ingredients evenly.
  4. Chill the salad for at least 30 minutes before serving.
