Creamy chicken and cheese layered casserole with tortillas, enriched with mushroom and chicken soups, perfect for comforting family dinners and gatherings.

Ingredients

  • 2 chicken breasts or 6 to 8 chicken breasts, cooked and cut in pieces
  • 12 corn tortillas, torn into 1-inch pieces
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can enchilada sauce
  • 1 large onion, chopped
  • 3/4 lb. grated Cheddar cheese

Instructions

  1. Butter a 2 1/2-quart casserole dish.
  2. Mix all ingredients together: cooked chicken, torn tortillas, cream of mushroom soup, cream of chicken soup, enchilada sauce, chopped onion, and grated Cheddar cheese.
  3. Let the mixture stand in the refrigerator for 24 hours.
  4. Bake at 325°F for 1 to 1 1/2 hours.
  5. Serve with taco sauce.
