  • 10 flour tortillas (8-inch)
  • 3/4 lb. Monterey Jack cheese, shredded
  • 3/4 lb. Cheddar cheese, shredded
  • 2 cans (4 oz. each) green chilies, drained and chopped
  • 2 Tbsp. butter, melted

  • fresh whole chilies (optional)
  • 1 (8 oz.) package dairy sour cream (optional)
  • green onion

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Lightly butter two 8-inch round cake pans, pie pans, souffle dishes, or casseroles.
  3. Place one tortilla in each prepared pan.
  4. Combine the shredded Monterey Jack and Cheddar cheeses in a bowl.
  5. Sprinkle 2/3 cup of the cheese mixture over each tortilla.
  6. Top each with a generous tablespoon of chopped green onions and green chilies.
  7. Add another tortilla on top of each stack.
  8. Repeat layering until there are four layers in each pan.
  9. Top with a fifth tortilla on each stack.
  10. Brush the tops with melted butter.
  11. Bake uncovered in the preheated oven for 20 minutes, or until the cheese is melted and the tops are lightly browned.
  12. Let the stacks cool for 5 minutes.
  13. Invert a serving platter over each pan, then carefully flip the stack onto the platter.
  14. Repeat with the second stack.
  15. Cut each stack into 16 wedges.
  16. Garnish with salsa, fresh chilies, and sour cream if desired.
