Ingredients

  • 2 1/2 cups chicken stock or broth
  • 1/4 cup heavy cream
  • 1 medium potato
  • 2 cups chopped kale
  • 1/2 lb spicy Italian sausage
  • 1/4 tsp salt
  • 1/4 tsp red pepper flakes

Instructions

  1. Combine chicken stock and heavy cream in a saucepan over medium heat.
  2. Slice the unpeeled potato into 1/4 inch thick slices and add to the soup.
  3. Add chopped kale to the soup.
  4. Saute the spicy Italian sausage until browned.
  5. Cool the cooked sausage, then cut it into slices about 1/4 inch thick at an angle.
  6. Add sausage slices to the soup.
  7. Add salt and red pepper flakes to the soup.
  8. Let the soup simmer for about 2 hours, stirring occasionally.
