Instructions

  1. Brown chicken pieces in oil in a skillet; remove to a baking dish.
  2. Sprinkle chicken with salt and pepper.
  3. Add 1/2 cup water to the skillet and cover; bake in a 350°F oven for 1 hour.
  4. Halve and seed the grapes.
  5. Cut green pepper into 1-inch squares and onion into coarse pieces to make 1 cup each.
  6. Add remaining 1/2 cup water, cornstarch, honey, vinegar, and salt to the cooked chicken mixture, stirring constantly to make a thick sauce.
  7. Add ginger, green pepper, and onion to the sauce.
  8. Simmer for 3 minutes longer.
  9. Remove ginger root and pour the sauce over the chicken to serve.
