Ingredients

  • 5 to 6 eggs, separated
  • 7/8 to 1 cup flour
  • 1 tablespoon butter or oleo
  • lemon or orange rind, grated
  • 1 tablespoon lemon or orange juice

Instructions

  1. Line a loaf pan with wax paper or a cookie tin to prepare for baking.
  2. Separate the eggs and set aside the whites and yolks.
  3. Beat the egg yolks with grated lemon or orange rind and juice until well combined.
  4. Gradually add the flour to the yolk mixture, folding gently.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the yolk and flour mixture to maintain airiness.
  7. Melt the butter or oleo and fold into the batter.
  8. Pour the batter into the prepared loaf pan.
  9. Bake in a preheated oven at 350°F (175°C) until a toothpick inserted in the center comes out clean.
