- Cream butter, sugar and honey until light and creamy. Add egg and beat until well combined. Fold in flour and baking soda until just combined. Turn out onto a lightly floured surface and knead until smooth. Wrap in plastic wrap and chill for 15 mins.
- Preheat oven to 350°F. Line 2 baking trays with parchment paper. Roll dough out into a 12x8 inch rectangle then cut into 6 - 4x2 inch rectangles. Transfer to prepared trays. Using a 3/4 inch round pastry cutter, cut 3 holes from each rectangle to make the traffic lights.
- Fill holes in cookies with crushed candies to resemble traffic lights. Bake for 10 mins, or until golden brown. Let cool on trays.
