Traffic Light Cookies

Ingredients

  • 1/2 cup butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1 None egg
  • 1/2 cup all-purpose flour, sifted
  • 1/4 tsp baking soda
  • 5 None red hard candies, crushed

Instructions

  1. Cream butter, sugar and honey until light and creamy. Add egg and beat until well combined. Fold in flour and baking soda until just combined. Turn out onto a lightly floured surface and knead until smooth. Wrap in plastic wrap and chill for 15 mins.
  2. Preheat oven to 350°F. Line 2 baking trays with parchment paper. Roll dough out into a 12x8 inch rectangle then cut into 6 - 4x2 inch rectangles. Transfer to prepared trays. Using a 3/4 inch round pastry cutter, cut 3 holes from each rectangle to make the traffic lights.
  3. Fill holes in cookies with crushed candies to resemble traffic lights. Bake for 10 mins, or until golden brown. Let cool on trays.
