Ingredients

  • 16 cucumbers
  • salt
  • water
  • 2 1/2 oz alum
  • 1 gal vinegar
  • 10 c sugar
  • 1 1/4 oz pickling spice

Instructions

  1. Make a brine by dissolving salt in water in a 4 or 5-gallon plastic can with a lid.
  2. Ensure the brine is salty enough to float an egg.
  3. Prepare cucumbers by cleaning and trimming the ends.
  4. Combine vinegar, sugar, alum, and pickling spice in a large container to create the pickling solution.
  5. Pack cucumbers into the brine, ensuring they are fully submerged.
  6. Seal the container and let the pickles ferment for at least a week before tasting.
