Ingredients

  • 1 (6 oz.) box long grain and wild rice with herb seasoning
  • 2 (10 oz.) packages frozen broccoli
  • 2 to 3 cups raw chicken breast, cut in chunks
  • 1 can water chestnuts, drained and sliced
  • 1/2 cup fat-free mayonnaise
  • 1 can low-fat cream of mushroom soup

Instructions

  1. Cook rice and broccoli as directed on the package.
  2. In a 9 x 13-inch baking dish, layer rice, then chicken, then broccoli.
  3. In another dish, mix water chestnuts, mushroom soup, and mayonnaise.
  4. Spread the mixture over the layered ingredients.
  5. Bake at 350°F for 40 minutes.
  6. If desired, sprinkle with Parmesan cheese and bake an additional 5 to 10 minutes.
