Ingredients

  • 1 Tbsp. lemon juice
  • 2 tsp. soy sauce
  • 1/4 tsp. ground ginger
  • 1/8 tsp. pepper
  • 1 1/2 lb. boneless chicken breast
  • 1 can lite peaches, pears, apricots or any kind of fruit

Instructions

  1. Combine lemon juice, soy sauce, ground ginger, and pepper; pour over chicken in a shallow baking dish.
  2. Bake in a preheated oven at 350°F (175°C) for 15 minutes.
  3. Arrange canned fruit around the chicken.
  4. Baste the chicken with the cooking liquid and bake for an additional 10 minutes.
