Ingredients

  • 1 1/2 cups pecans
  • 1 1/2 cups walnuts
  • 1 (10 oz.) package whole pitted dates
  • 1 cup candied red cherries
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Line two 9-inch round cake pans with foil.
  3. Lightly grease the foil-lined pans.
  4. In a large mixing bowl, combine pecans, walnuts, chopped dates, and candied red cherries.
  5. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  6. Add eggs and vanilla to the dry ingredients and mix well.
  7. Fold the dry ingredients into the nut and fruit mixture until evenly combined.
  8. Divide the batter evenly between the prepared cake pans.
  9. Bake in the preheated oven for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before removing from pans and serving.
