Ingredients

  • 1/2 cup shortening or oil
  • 1/2 cup sugar
  • 1 egg
  • 2 1/2 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1 cup molasses
  • 1 cup hot water

Instructions

  1. Melt shortening in a 3 or 4-quart saucepan over low heat. Remove and let cool.
  2. Add sugar and egg; beat well.
  3. Sift together flour, baking soda, salt, cinnamon, ginger, and cloves.
  4. Combine molasses and hot water. Alternately add the molasses mixture and the flour mixture to the first mixture, mixing well after each addition.
  5. Pour the batter into a greased 9 x 9-inch angel food cake pan.
  6. Bake at 350°F for 50 to 60 minutes.
  7. Cool for 5 minutes before removing from the pan.
  8. Serve with frosting, ice cream, or whipped cream. If frosting is used, sprinkle generously with coconut.
