Tropical Sweet Potatoes combine creamy mashed sweet potatoes with pineapple and citrus zest, creating a sweet, tangy side perfect for summer gatherings or family dinners.

Ingredients

  • 6 medium sweet potatoes
  • 3 Tbsp. margarine
  • 3 Tbsp. brown sugar
  • 1/4 cup egg substitute or 1 egg
  • 1 Tbsp. orange zest or grated rind
  • 1 (15 1/2 oz.) can crushed pineapple, drained

Instructions

  1. Wash and pierce the sweet potatoes.
  2. Place potatoes in a microproof 3-quart casserole with 2 tablespoons water.
  3. Cover and microwave on High for 15 to 17 minutes, or until soft, rearranging once.
  4. Cool enough to handle.
  5. Peel and cut potatoes into chunks.
  6. Place potatoes and margarine in a 2-quart casserole.
  7. Beat with an electric mixer or mash until smooth.
  8. Add remaining ingredients: brown sugar, egg substitute or egg, orange zest, and crushed pineapple; mix well.
  9. Spread the mixture evenly in the casserole.
  10. Microwave uncovered on High for 10 minutes, stirring once.
