- Wash and pierce the sweet potatoes.
- Place potatoes in a microproof 3-quart casserole with 2 tablespoons water.
- Cover and microwave on High for 15 to 17 minutes, or until soft, rearranging once.
- Cool enough to handle.
- Peel and cut potatoes into chunks.
- Place potatoes and margarine in a 2-quart casserole.
- Beat with an electric mixer or mash until smooth.
- Add remaining ingredients: brown sugar, egg substitute or egg, orange zest, and crushed pineapple; mix well.
- Spread the mixture evenly in the casserole.
- Microwave uncovered on High for 10 minutes, stirring once.
