Tuna Creole

Ingredients

  • 3 Tbsp. margarine
  • 2 Tbsp. chopped bell pepper
  • 4 Tbsp. flour
  • 1 1/2 c. milk
  • 1/2 c. canned tomatoes
  • 3/4 Tbsp. salt
  • dash of pepper
  • 1 medium can tuna fish

Instructions

  1. Melt butter in saucepan and add bell pepper and cook gently about 3 minutes.
  2. Stir in flour and milk gradually.
  3. When smooth add tomatoes, salt and pepper.
  4. Cook slowly until thick, stirring constantly (about 15 minutes).
  5. Add tuna fish and cook 2 minutes more.
  6. Serve over buttered toast.
