Ingredients

  • 8 medium potatoes, peeled and boiled
  • Salt and pepper
  • 2 (6 oz.) cans flaked tuna, drained
  • 2 eggs
  • 2 cups milk
  • 2 Tbsp. grated Parmesan cheese
  • 1 Tbsp. seasoned fine dry bread crumbs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut the boiled potatoes into 1/4-inch slices.
  3. Arrange half of the potato slices in a greased shallow 2-quart baking dish.
  4. Sprinkle lightly with salt and pepper.
  5. Layer the drained tuna over the potatoes.
  6. Add the remaining potato slices on top.
  7. Beat the eggs, milk, and grated Parmesan cheese together until well combined.
  8. Pour the egg mixture over the layered potatoes and tuna.
  9. Sprinkle the seasoned bread crumbs evenly over the top.
  10. Bake for 45 minutes or until the custard is set and potatoes are golden brown.
