Tuna Rice Bake

Ingredients

  • 2 1/2 cups cooked rice
  • 4 eggs
  • 2 tablespoons melted butter
  • 2 tablespoons chopped fresh parsley
  • 1 1/2 cups shredded Cheddar cheese
  • 1 7-ounce can tuna, drained and flaked
  • 1 1/4 cups milk
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 small tomato, sliced

Instructions

  1. Combine cooked rice, one slightly beaten egg, melted butter, and chopped parsley. Press the mixture firmly against the bottom and sides of a lightly greased 9-inch pie plate.
  2. Sprinkle 3/4 cup of shredded Cheddar cheese over the rice crust.
  3. Top with half of the drained and flaked tuna, then sprinkle with the remaining cheese.
  4. Beat together milk, two eggs, salt, and pepper; pour this mixture evenly over the cheese and tuna.
  5. Sprinkle the remaining tuna on top of the mixture.
  6. Bake in a preheated 375°F oven for 45 minutes.
  7. Arrange sliced tomato on top of the baked dish.
  8. Bake an additional 5 minutes or until a knife inserted in the center comes out clean.
  9. Let stand for 10 minutes before serving.
