Ingredients

  • 1 lb. ground turkey
  • 14 1/2 oz. stewed tomatoes
  • 1 cup water
  • 2/3 cup long grain rice
  • 2 Tbsp. chili powder
  • pepper
  • salt
  • grated Colby cheese

Instructions

  1. In a large skillet, brown the ground turkey.
  2. Drain the grease from the skillet.
  3. Stir in stewed tomatoes, water, rice, and chili powder into the skillet.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  5. Serve the turkey and rice mixture over tortilla chips.
  6. Top with grated Colby cheese before serving.
