A vibrant turkey chip salad combining tender cooked turkey with crunchy toasted coconut and flavorful seasonings, perfect for a light, satisfying meal or party appetizer.

Ingredients

  • 2 c. diced cooked turkey or chicken
  • 1 c. chopped celery
  • 2/3 c. mayonnaise or salad dressing
  • 2 Tbsp. chopped canned pimento
  • 2 tsp. prepared mustard
  • 1/2 tsp. ground ginger
  • 1/4 tsp. salt
  • dash of pepper
  • 1/2 c. toasted coconut chips

Instructions

  1. Combine the diced cooked turkey or chicken, chopped celery, mayonnaise or salad dressing, chopped canned pimento, prepared mustard, ground ginger, salt, and pepper in a bowl.
  2. Chill the mixture until ready to serve.
  3. Stir in toasted coconut chips just before serving.
  4. Pile the salad onto greens and garnish with additional coconut chips if desired.
