Ingredients

  • 6 oz. corkscrew macaroni
  • 3 c. cooked diced chicken
  • 1/2 c. Italian dressing
  • 1 medium onion, chopped fine
  • 1 c. celery
  • 1/2 c. mayonnaise
  • 3 Tbsp. lemon juice
  • 1 Tbsp. mustard
  • 1 c. ripe olives, sliced
  • 1 tsp. white pepper
  • salt to taste

Instructions

  1. Cook the corkscrew macaroni according to package instructions, then drain and mix with Italian dressing while still hot.
  2. Allow the macaroni to cool to room temperature.
  3. Add the cooked diced chicken to the cooled macaroni and toss gently.
  4. In a separate bowl, combine the mayonnaise, lemon juice, mustard, white pepper, and salt to taste.
  5. Add the chopped onion, sliced olives, and celery to the mayonnaise mixture and stir well.
  6. Combine the dressed macaroni and chicken with the vegetable and mayonnaise mixture, mixing thoroughly.
  7. Chill the salad in the refrigerator for at least 1 hour before serving.
