Ingredients

  • 3/4 cup oat bran cereal
  • 1 1/2 teaspoon grated orange peel (optional)
  • 1 egg white
  • 2 tablespoon margarine, melted
  • 1 teaspoon parsley flakes
  • 1/4 teaspoon sage
  • 1/3 cup orange juice
  • 1 pound fresh turkey cutlets
  • 1/2 cup whole berry cranberry sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly spray a rack of a foil-lined pan with vegetable oil cooking spray or lightly oil it.
  3. In a shallow dish, combine oat bran cereal, parsley flakes, grated orange peel (if using), and sage; mix well.
  4. Dip each turkey cutlet into the beaten egg white, then coat with the oat bran mixture.
  5. Place coated turkey cutlets on the prepared rack.
  6. Bake in the preheated oven for about 20-25 minutes until cooked through and golden.
  7. Warm the cranberry sauce and serve alongside the turkey cutlets with orange juice drizzled over if desired.
