Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 2 cups grated zucchini
  • 1 cup chopped nuts
  • 1 (8 oz.) can crushed pineapple, drained
  • 1/4 cup graham cracker crumbs

Instructions

  1. Combine sugar and oil in a mixing bowl.
  2. Beat in eggs and vanilla until well blended.
  3. In a medium bowl, mix flour, cinnamon, baking soda, salt, baking powder, and nutmeg.
  4. Gradually stir the dry mixture into the sugar mixture.
  5. Add grated zucchini, chopped nuts, and drained crushed pineapple; stir until well blended.
  6. Grease a 10-cup plastic or ceramic tube dish.
  7. Coat the dish with graham cracker crumbs.
  8. Pour the batter into the prepared tube dish.
  9. Microwave on level 7 for 20 to 25 minutes or until a toothpick inserted in the center comes out clean, turning a quarter turn halfway through cooking.
  10. Let stand for 10 minutes before inverting onto a serving platter.
