Ingredients

- 1 cup vegetable oil ⓘ

- 1 cup chopped nuts ⓘ
- 1 (8 oz.) can crushed pineapple, drained ⓘ
- 1/4 cup graham cracker crumbs ⓘ
Instructions
- Combine sugar and oil in a mixing bowl.
- Beat in eggs and vanilla until well blended.
- In a medium bowl, mix flour, cinnamon, baking soda, salt, baking powder, and nutmeg.
- Gradually stir the dry mixture into the sugar mixture.
- Add grated zucchini, chopped nuts, and drained crushed pineapple; stir until well blended.
- Grease a 10-cup plastic or ceramic tube dish.
- Coat the dish with graham cracker crumbs.
- Pour the batter into the prepared tube dish.
- Microwave on level 7 for 20 to 25 minutes or until a toothpick inserted in the center comes out clean, turning a quarter turn halfway through cooking.
- Let stand for 10 minutes before inverting onto a serving platter.
