Turkey Enchilada Stack
Ingredients
- 1 c. mild green salsa ⓘ
- 1 medium tomato, chopped
- 4 1/2 oz. sharp Cheddar cheese, shredded ⓘ
- 6 oz. cooked turkey or chicken, shredded ⓘ
- 1/2 c. drained canned diced mild green chilies ⓘ
- 1/2 c. chopped onion ⓘ
- 6 (6-inch) corn tortillas ⓘ
- 1/2 medium avocado, diced ⓘ
- 3/4 c. plain nonfat yogurt ⓘ
- 2 tsp. fresh lime juice
- 1 tsp. grated lime zest ⓘ
- 1 c. shredded lettuce ⓘ
Instructions
- Preheat the oven to 450°.
- Set aside, in separate bowls, 1/3 cup of salsa, 1/4 cup of chopped tomato and 3 tablespoons of the cheese.
- In a large bowl, combine the turkey, chilies, onion, the remaining salsa, tomato and cheese; stir until well mixed.
