Ingredients

  • 1 lb. turkey breasts, sliced thinly to 1/2 to 3/4-inch
  • 6 oz. apple juice
  • 6 Tbsp. soy sauce
  • 6 Tbsp. dry sherry
  • 1 large clove garlic, crushed
  • 2 tsp. fresh chopped thyme or 1/2 tsp. dried thyme
  • 1 Tbsp. butter
  • 2 Tbsp. vegetable oil
  • 3/4 lb. plums, washed, pitted and halved

Instructions

  1. Pound the turkey slices if necessary between two sheets of waxed paper to achieve a uniform thickness.
  2. Place the turkey slices in a large bowl.
  3. Pour the apple juice, soy sauce, dry sherry, crushed garlic, and thyme over the turkey and gently mix to coat.
  4. Cover the bowl and refrigerate overnight or for 3 to 4 hours. Remove the turkey and reserve the marinade.
  5. Heat the butter and vegetable oil in a large skillet over medium-high heat.
  6. Quickly brown the turkey slices on both sides, being careful not to overcook.
  7. Add the halved plums and the reserved marinade to the skillet.
  8. Cover and simmer gently for 10 to 15 minutes until the plums are tender and the flavors meld.
  9. Garnish with fresh thyme, dust with pepper, and serve.
