Quick and flavorful turkey tortillas filled with seasoned ground turkey, sweet corn, cheese, olives, and topped with taco sauce, perfect for a satisfying weeknight meal.

Ingredients

  • 1 1/2 lb. ground turkey
  • 1 (10 oz.) pkg. frozen Mexican corn
  • 4 flour tortillas
  • 1/4 c. shredded Cheddar cheese
  • 2 Tbsp. taco sauce
  • 1/4 c. sliced ripe olives

Instructions

  1. Crumble turkey in a 1-quart casserole dish; add frozen Mexican corn.
  2. Microwave for 8 to 10 minutes, until turkey is no longer pink.
  3. Warm the flour tortillas.
  4. Fill each tortilla with the turkey and corn mixture.
  5. Sprinkle with shredded Cheddar cheese and sliced ripe olives.
  6. Drizzle with taco sauce and serve.
