Ingredients

  • 4 Tbsp. margarine
  • 2 (20 oz.) cans sliced pineapple (unsweetened), undrained
  • 1 (18 1/2 oz.) box yellow cake mix
  • ingredients called for on cake mix package
  • 1 c. brown sugar, packed
  • 22 maraschino cherries

Instructions

  1. Melt 2 tablespoons of margarine in each of two 8-inch microwave-safe cake dishes.
  2. Blend half of the brown sugar with the margarine in each dish and spread evenly over the bottom of each dish.
  3. Arrange the drained pineapple slices and maraschino cherries over the brown sugar in each dish.
  4. Prepare the cake mix according to package instructions, substituting the reserved pineapple juice for the liquid called for.
  5. Add water if necessary to make up the full measure as indicated on the cake mix package.
  6. Pour approximately 2 2/3 cups of batter over the fruit in each dish, spreading evenly.
  7. Microwave on medium-high (70%) power for 8 to 10 minutes until the cake is cooked through.
  8. Invert one cake layer onto a serving plate and then invert the second layer on top of the first. Serve warm if desired.

Tips & Substitutions

For a lighter version, consider using a sugar substitute in place of brown sugar. If you don't have pineapple juice, orange juice can be a suitable liquid alternative for the cake mix. Ensure the cake dishes are microwave-safe and avoid overcrowding them in the microwave for even cooking. Experiment with adding nuts or coconut to the batter for added texture.

Serving Suggestions

Serve this delightful Two Layer Upside-Down Cake warm, topped with whipped cream or a scoop of vanilla ice cream for a decadent dessert. It pairs beautifully with Gerken Salat(Cucumber Salad) for a refreshing contrast. Consider serving it alongside a cup of tea or coffee for a perfect afternoon treat.

Storage & Reheating

Store any leftover cake in an airtight container in the refrigerator for up to 3 days. To reheat, place a slice in the microwave for 10-15 seconds or until warmed through. For best results, cover with a damp paper towel to prevent drying out. This cake can also be enjoyed cold or at room temperature.
