Two Potato Soup

A creamy, comforting potato soup blending sweet and regular potatoes with subtle nutmeg and leek flavors, perfect for cozy dinners or as a warm starter.

Ingredients

  • 1 large leek
  • 1 Tbsp. butter
  • 1 can chicken broth
  • 1/2 lb. potatoes, peeled and cut into 3/4-inch pieces
  • 1/4 tsp. pepper
  • 1/2 lb. sweet potatoes, peeled and cut into 3/4-inch pieces
  • 1/8 tsp. ground nutmeg
  • 1 c. milk

Instructions

  1. Trim the leek, cutting off all but 1 inch or so of green.
  2. Rinse the leek under running water to remove all sand between leaves, then chop finely.
  3. In a 2 1/2 quart microwave-safe bowl, melt the butter.
  4. Add the chopped leek and cover with vented plastic wrap.
  5. Microwave on High for 3 to 5 minutes until the leek is tender.
  6. Stir in the chicken broth, both potatoes, pepper, and ground nutmeg.
  7. Cover with vented plastic wrap and microwave on High for 15 to 18 minutes or until the potatoes are tender.
  8. Transfer the mixture to a blender and process until smooth.
  9. Return the pureed soup to the bowl and stir in the milk.
  10. Cover and microwave on High for 1 to 3 minutes until heated through.
  11. Stir once to combine and serve.
