Ingredients

  • 2 cans green beans, drained
  • 1 (12 oz.) can kernel corn
  • 1 small head cauliflower, broken into flowers
  • 1 c. sliced celery
  • 1 c. sliced green onions
  • 1 c. thinly sliced carrots
  • 2/3 c. salad oil
  • 1/2 c. lemon juice
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 Tbsp. sugar

Instructions

  1. Combine all ingredients in a large mixing bowl. Mix gently, cover and refrigerate at least 2 hours.
  2. Serve marinated vegetables in lettuce cups.
