Ingredients

  • 1 cup pancake mix
  • 2 tablespoons butter or margarine
  • 16 ounces blueberries, well drained

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare pancake mix according to package directions and set aside.
  3. In a 10-inch pie plate, melt butter in the oven and remove from heat.
  4. Spoon drained blueberries into the bottom of the pie plate over the melted butter.
  5. Carefully pour the prepared batter over the blueberries.
  6. Bake for 18 minutes or until the top springs back when tapped.
  7. Loosen edges and invert the pie plate onto a serving plate.
  8. Cut into wedges and serve with maple-flavored syrup.
