Ingredients

  • 2 Tbsp. butter
  • 1 cup sugar
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • No. 2 can cherries
  • hot water
  • 1/2 tsp. almond extract
  • 2 tsp. cornstarch
  • 1 cup sifted flour
  • 1/2 cup milk

Instructions

  1. Cream butter and 1/2 cup sugar in a 1 1/2-quart casserole or baking dish.
  2. Sift flour, baking powder, and salt together.
  3. Add alternately with milk to the creamed mixture and stir well.
  4. Drain cherries; add enough hot water to the juice to make 1 1/2 cups liquid. Add almond extract.
  5. Mix cornstarch with remaining sugar.
  6. Add cornstarch mixture to the cherry juice and bring to a boil, stirring constantly.
  7. Pour hot cherry juice over the batter in the baking dish.
  8. Spread the drained cherries on top of the batter.
  9. Do not stir.
  10. Bake at 350°F (175°C) for 40 to 45 minutes.
  11. Serve warm with cream, whipped cream, or ice cream.
