Upside-Down Cherry Pudding

- Cream butter and 1/2 cup sugar in a 1 1/2-quart casserole or baking dish.
- Sift flour, baking powder, and salt together.
- Add alternately with milk to the creamed mixture and stir well.
- Drain cherries; add enough hot water to the juice to make 1 1/2 cups liquid. Add almond extract.
- Mix cornstarch with remaining sugar.
- Add cornstarch mixture to the cherry juice and bring to a boil, stirring constantly.
- Pour hot cherry juice over the batter in the baking dish.
- Spread the drained cherries on top of the batter.
- Do not stir.
- Bake at 350°F (175°C) for 40 to 45 minutes.
- Serve warm with cream, whipped cream, or ice cream.
