Vanilla Ceviche
Ingredients
- 1 None shallot, peeled and finely diced
- 1/2 None lemon, juiced ⓘ
- 1/2 None vanilla pod, halved lengthways and seeds scraped out ⓘ
- 200 g cod fillet, cut into cubes ⓘ
- 2 None green and 2 black pitted olives, halved ⓘ
- 3 None red and 3 yellow cherry tomatoes, quartered
- 4 sprigs fresh coriander, chopped, plus extra sprigs for garnish ⓘ
- 3 sprigs fresh chives, chopped
- 2 tbsp olive oil ⓘ
Instructions
- Mix the shallot, lemon juice and vanilla seeds. Add the cod and turn until coated. Season with salt and black pepper and chill for 15 mins.
- Add the olives, tomatoes, cilantro and chives and stir. Drizzle with olive oil and serve garnished with more cilantro.
