Ingredients

  • 1 hen or 2 fryers
  • 2 green peppers, chopped
  • 2 large onions, chopped
  • 2 sticks margarine
  • 2 (8 oz.) packages spaghetti
  • 1 can English peas, drained
  • 1 can tomatoes and peppers (8 to 10 oz.)
  • 1 (4 oz.) jar pimento, chopped
  • 1 lb. Velveeta cheese
  • salt and pepper

Instructions

  1. Cook the chicken and set aside, then debone and shred the meat.
  2. Saute chopped onions and green peppers in margarine until softened.
  3. Cook spaghetti in chicken broth until al dente, adding water if needed.
  4. Combine cooked chicken, peas, tomatoes and peppers, chopped pimento, and cheese with the cooked spaghetti.
  5. Cook until the cheese melts and all ingredients are well mixed.
  6. Transfer the mixture to a casserole dish.
  7. Bake at 325°F for 30 minutes.
