Ingredients

  • 1 lb. veal cutlets
  • 1/2 lb. scallops
  • 1 small green pepper
  • 1/2 cup sliced mushrooms
  • salt and pepper to taste
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 2 Tbsp. olive oil

Instructions

  1. Cut veal into 2-inch pieces, dredge in flour, and shake off excess flour.
  2. Brown the veal in two tablespoons of olive oil, then remove from the pan.
  3. Add chopped green pepper and sliced mushrooms to the pan and cook until tender.
  4. Add scallops to the pan and cook until tender.
  5. Remove scallops from the pan.
  6. Add chicken broth to the pan and simmer for one minute.
  7. Return veal, peppers, mushrooms, and scallops to the pan and simmer until the veal is tender.
  8. Add white wine and cook for one minute more.
  9. Serve hot, accompanied by cooked noodles or rice.
