Ingredients

  • 1 c. flour
  • 2 Tbsp. cornstarch
  • 3/4 tsp. salt
  • 1 egg yolk
  • 1 c. ice water

Instructions

  1. Mix flour, cornstarch, and salt together in a bowl.
  2. Add egg yolk and ice water; stir until smooth.
  3. Beat the egg white until stiff peaks form.
  4. Gently fold the egg white into the batter mixture.
  5. Dip vegetables into the batter, then fry at 400°F until golden and crispy.
  6. Parboil banana peppers before dipping and frying.
  7. Zucchini squash is especially good when cooked this way.
