Ingredients

  • 1 1/4 cups flour
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/3 cup shortening
  • 2 eggs
  • 1/3 cup molasses
  • 1/4 cup hot water

Instructions

  1. Place all ingredients in a mixing bowl.
  2. Blend at low speed, then beat at medium speed for 2 minutes.
  3. Spread the batter into a greased 8 x 8-inch pan.
  4. Shield the corners of the pan.
  5. Microwave at 50% power for 6 minutes, rotating a quarter turn every 3 minutes.
  6. Remove from microwave and peel back the foil.
  7. Increase microwave power to high.
  8. Microwave for an additional 1 to 1 1/2 minutes, or until done.
  9. Cool the gingerbread, then serve with whipped topping.
