Ingredients

  • 10 lb. tomatoes
  • 1 c. chopped celery
  • 1 chopped green pepper
  • 5 chopped onions
  • parsley flakes
  • 1/2 c. sugar
  • 1/4 c. salt
  • 1/2 tsp. pepper
  • 1 pt. water

Instructions

  1. Chop the celery, green pepper, and onions.
  2. Cook these vegetables in a pressure cooker with 1 pint of water for 5 minutes.
  3. Once cooked, run the mixture through a blender to make a pulp.
  4. Add the vegetable pulp and other ingredients to the peeled tomatoes.
  5. Bring the mixture to a rolling boil.
  6. Pour the hot juice into sterilized jars.
  7. Process the jars in a pressure canner for 10 minutes at pressure setting 5.
