- Chop the celery, green pepper, and onions.
- Cook these vegetables in a pressure cooker with 1 pint of water for 5 minutes.
- Once cooked, run the mixture through a blender to make a pulp.
- Add the vegetable pulp and other ingredients to the peeled tomatoes.
- Bring the mixture to a rolling boil.
- Pour the hot juice into sterilized jars.
- Process the jars in a pressure canner for 10 minutes at pressure setting 5.
