Ingredients

  • 1/2 cup thinly sliced cucumbers
  • 1/4 cup shredded carrots
  • 2 tablespoons oil-free Italian dressing
  • 1/4 cup (1 oz.) fat-free shredded Mozzarella cheese
  • 2 English muffins, split and toasted
  • 1/4 cup alfalfa sprouts

Instructions

  1. Combine sliced cucumbers, shredded carrots, Italian dressing, and cheese; set aside.
  2. Sprinkle the cheese mixture over toasted English muffin halves.
  3. Broil 5 1/2 inches from heat for 1 minute or until cheese melts.
  4. Top each muffin half with the vegetable mixture and alfalfa sprouts.
  5. Serve immediately.
