Vegetables With Pasta
Ingredients
- 1 medium yellow squash ⓘ
- 1 medium zucchini ⓘ
- 1 medium sweet red pepper ⓘ
- 1 1/2 c. sliced fresh mushrooms ⓘ
- 2 Tbsp. olive oil
- 2 cloves garlic, minced ⓘ
- 6 oz. linguini
- 1/4 c. dry white wine ⓘ
- 1/4 tsp. salt ⓘ
- 1/4 tsp. basil ⓘ
- 1/4 tsp. tarragon ⓘ
- 1/4 tsp. red pepper flakes ⓘ
- 1/4 c. grated Parmesan cheese ⓘ
Instructions
- Cook linguini per package directions.
- Cut squash and zucchini into 1/4-inch thick slices; then cut slices into thin strips (leave peel on).
- Cut red pepper into thin strips.
- Stir-fry vegetables in olive oil with garlic for 2 to 3 minutes.
- Mix with cooked linguini, wine, salt, basil, tarragon and red pepper.
- Top with grated Parmesan cheese and serve.
