Vegetarian Enchiladas

Ingredients

  • 1 large onion
  • 1 to 2 bell peppers
  • 1 to 2 cans stewed tomatoes
  • 1 glove garlic
  • 1 to 2 tsp. cumin
  • 1 can green chilies
  • 1 can sliced black olives
  • 1 large sour cream
  • 12 oz. shredded Cheddar cheese
  • 1 pkg. flour tortillas

Instructions

  1. Finely chop onions and bell peppers; saute.
  2. Add stewed tomatoes, chopped chilies and chopped garlic.
  3. Add cumin to taste. Cook down until thick.
  4. Roll mixture into flour tortillas.
  5. Add olives and 1 to 2 spoons sour cream and Cheddar cheese to each tortilla.
  6. Place tortillas in a pan; pour any remaining sauce over them.
  7. Top with shredded cheese and bake at 350° until bubbly.
